Woopee! Chili

- 1 tbsp butter, unsalted
- 1 sweet onion, diced
- 1 jalapeno, diced
- 1 lb ground chuck
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) dark kidney beans, drained
- 1 tbsp tomato paste
- 12 oz beef broth
- 3 tbsp Woopee! Chili Seasoning
- Shredded cheddar cheese
- White onion, diced
SERVES: 6 | COOK TIME: 1 HOUR 20 MINUTES


In a large saucepan on the stovetop over medium heat, melt the butter.
Add the onion and jalapeno and cook until soft, about 3 to 5 minutes.
Add the ground chuck and break it up with a spoon. Cook until browned, about 12 minutes more.
Strain the rendered fat, then return the saucepan to the stovetop. Add the diced tomatoes, beans, tomato paste, beef broth, and Woopee!
Bring to a boil, then reduce to a simmer. Continue to cook for an hour, stirring occasionally.
Serve and top with shredded cheddar cheese and onion.
